Sold internationally, they are pretty similar to Mounds bars – sweet coconut patties engulfed in a rich dark chocolate coating. Today I thought that I would take a break from the usual Mars Bar cookie recipe and instead I would add Bounty Chocolate to the base cookie recipe. Take out of the oven and let cool down on the baking sheet for some time, then transfer to a wire rack and let cool down completely. I pressed some almonds into the coconut bars before freezing so they were almond joy and added a little bit of almond extract.

The desiccated coconut adds a a whole new level of flavour and the combination with dark chocolate is simply mind-blowing.
